Sium sissarium Supplied as two or three shooting seedlings or crowns

Originating in East Asia, spreading through Europe, before being usurped in the vegetable garden by the more easily harvested parsnip and potato, skirret produces creamy-white, sweet, nutty roots that can be cut when plants die back in winter, and crowns divided and replanted.

Plants grow to around 1.2m tall, with feathery, green foliage and plentiful, lacy, white flowers that attract a variety of beneficial and beautiful insects in summer. New shoots from established crowns are a delicious spring vegetable.
