Potato Onion, Allium cepa var. aggregatum

Brilliant, long-keeping, tasty and easy to grow perennial onion. Plant one any time from early autumn to very early spring (in cool temperate regions) and harvest anywhere from 4 to 16 bulbs in high summer. We turn the irrigation off in late October to let the skins harden so the bulbs store well, and harvest as soon as the tops bend and yellow. Hang harvested bulbs in a dry, airy, cool spot to cure before storing in a dry, cool, dark place for up to two years.

Crisp onions that are delicious young and fresh in salads, pickled or slow cooked.
