Dill, Anethum graveolens
A glorious annual herb that you can use in its entirety! Tender leaves and flowers are a delicious garnish, salad component or dressing ingredient. The while plant, leaves, stems, roots, flowers and seeds are used a a flavouring for pickles, dips, stuffings, teas and more. The flowers are excellent at attracting beneficial insects like hoverflies, ladybirds and parasitic wasps whose offspring will devour pests, so I plant it among the tomatoes, cabbages and anywhere there’s space.
Direct sow from September to April in full sun and rich soil. Plants that struggle from a missed watering or a hot day, or those sown as day-length increases in spring might bolt to seed, so sowing little and often is best for an extended harvest.
