Chives, Allium schoenoprasum
Wonderful perennial herb. Easy to grow, incredibly useful in the kitchen and stunning in the garden.
Used in salads, omelettes, dressings, soups, stir fries, pestos - anywhere you need a bright kick of onion flavour. If you have a clump of chives by your kitchen door you can pop out for a green garnish in moments. They flowers are also edible and make a pretty, mildly-oniony garnish.
Chives thrive in full sun and composted, well-watered soil, and grow to their most sweet, tender potential when spoiled, but they also tolerate dry and cold periods. They can be prone to rust if they aren’t given sufficient air and light, so keep your alliums well weeded, and divide clumps every two years to prevent them getting too dense.
They are wonderful border plants and look wonderful planted in drifts. In cold areas they are dormant in winter which is the best time to dig and divide them.
Sow seed from early spring, I find it easiest to start them in pots then plant out in the garden when the seedling are established.
